I would like to know how to change the global appearance of CMDBuild to fit my company color chart.

You must change de css files located inside Tomcat \webapps\cmdbuild\ui\openmaint\resources or similar. Search for CMDBuildUI-all.css, CMDBuildUI-all_1.css, CMDBuildUI-all_2.css, CMDBuildUI-all_3.css, CMDBuildUI-all_4.css.
